I love having savoury foods for breakfast that not many people would think to make! Stir-fry’s for anytime of day are such a great choice because you can mix and match the carbs, veggies and protein that you have in the pantry! A great way to provide your body with energy and nourishment.
This one is super quick because the lentils were already soaked, and air-fryer tofu is to die for.
This dish kept me feeling satisfied for half a day!

Breakfast Stir-Fry

- 1 tsp Cocavo Oil
- 1 c Lentils (soaked or canned)
- 1 Portobello Mushroom
- Handful of Spinach
- 1-2 Tbsp Nutritional Yeast
- 1-2 Tbsp Pumkin Seeds
- BBQ Sauce
- Sticky Chilli Ginger Sauce (I used Marions Kitchen)
- Air-Fried Tofu
Instructions
- Place the tofu in the air-fryer and lightly spray with oil or drizzle with flavouring of your choice.
- Cook the lentils, mushroom and spinach in the pan until wilted. Add the nutritional yeast and pumpkin seeds.
- Mix through the sauce.
- Place lentil mix into a bowl and decorate with fresh herbs or I used ‘Cheezoning’.
