I’ve got a game changer to share with you…
I recently played around and re-created this all-time favourite recipe as a plant-based version. It’s got a range of crunchy green salad ingredients that are key for optimum health. The chicken is swapped out for deliciously marinated tempeh, which is a soy-based protein. The mayonnaise is swapped out for a beautiful creamy cashew dressing!
Did you know that most people in the world don’t reach the minimum recommended daily consumption of 5+ fruit and vegetables a day? When I look at peoples plates, I often see a measly side dish of vegetables or salad. But I think the reason it’s avoided is because it’s not appealing and the consumer is unaware of how to cook and prepare their vegetables in a flavorsome way!
I read two books from Jason Shon Bennett called ‘Eat Less Live Long’ & ‘My 20 Golden Rules’, which speak about research done on the centenarians of the world (people who live to 100+). It takes you through each country and the people who live the longest tend to live off the land, have a stress-free lifestyle and often eat up to 17 servings of fruit and vegetables a day! No wonder the rest of the population are suffering from chronic illness and obesity. It’s our sedentary lifestyles and processed food!
If I can prove to people that plant-based food can be truly delicious whilst also being able to sustain an athletic lifestyle, then I have reached my goal! The Best Caesar Salad You Will Ever Taste

- SALAD
- 2 Tbsp Soy Sauce
- 2 Tbsp Golden Syrup (or maple)
- 300g Tempeh
- 1 Tbsp Extra Virgin Olive Oil
- 800g Cos Lettuce (can also use spinach, kale or slaw)
- 1 Cucumber
- 2 c Alfalfa Sprouts
- CRISPY SPICED CHICKPEAS
- 400g Chickpeas
- 1 tsp Garlic Powder
- 1 tsp Smoked Paprika
- 1 tsp Moroccan Seasoning
- CREAMY CASHEW DRESSING
- 1/2 c Raw Cashews
- 1/2 c Water
- 1 tsp Crushed Garlic
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Lemon Juice
- 1 Tbsp Dijon Mustard
- 1 Tbsp Soy Sauce
Instructions
- Combine soy sauce and golden syrup in a bowl. Slice the tempeh and toss to coat in the marinate.
- Heat the olive oil in a pan then add tempeh, cooking until slightly golden on each side.
- While the tempeh is cooking, prepare the salad ingredients by chopping everything and adding to a serving bowl. Add tempeh to the salad once ready to eat.
- Re-heat a dash of olive oil in the pan, along with the spices for the chickpeas. Stir for 1 minute until fragrant, then add the chickpeas. Cook until golden and slightly crunchy, then top the salad.
- Blend all of the ingredients for the creamy cashew dressing in a food processor. Mix through the salad, garnish with some fresh herbs and seeds if preferable and SERVE!
