I’ve got a very special recipe to share with you today which uses a similar mix to my Easy Meat-Free Nachos, but simply baked into a lasagne instead!
My favourite mince brand is from Vegie Delights available in New Zealand and Australia. This is not a promo post, I just haven’t come across something so realistic and delicious! However, you can use whichever veggie mince you have access to 🙂
This recipe is unbeatable if you’re having meat cravings but do not want to contribute to animal suffering or sacrifice your health, and you want to do your part for the planet. I have embedded a YouTube video about why vegans choose to eat mock meat if they don’t like meat, which gives a bit of an explanation. It’s something I get asked a lot!
You can also cook this up for a dinner party with omnivores because ANYONE can enjoy it! This makes it super easy to impress them with your vegan or plant-based lifestyle and show that it’s not just lettuce leaves 😅
The thing with this lasagne vs a normal meat lasagne is that it’s a very low in fat compared to typical mince with melted cheese topping. This mince is made from vegetable protein and mixed with chilli beans and crushed tomato. Dairy-free cheese is often made from potato starch and nutritional yeast to give it that cheesy flavour. You won’t be left feeling ill and sleepy afterwards.

The Heartiest Vegan Lasagne You Will Ever Taste

- 1/2 Tbsp Olive Oil
- 1 White Onion
- 1/2 Tbsp Crushed Garlic
- 1/2 Tbsp Crushed Ginger
- 1/2 tsp Cumin
- 1 tsp Rosemary
- 1 tsp Turmeric
- 400g Veggie Delights Mince
- 400g Chilli Beans
- 400g Crushes Tomatoes
- 1/2 c Water
- 6 Lasagne Sheets
- 200g Vegan Cheese (grated)
Instructions
- Pre-heat the oven to 180c.
- Thinly slice the onion then add to a pan on medium-high heat with the olive oil, garlic, ginger, cumin, rosemary and turmeric. Sauté from about 2 minutes until fragrant, then add the veggie mince and stir until slightly browned.
- Once the mixture starts to dry up, add the chilli beans, crushed tomatoes and water. Stir to combine.
- Make a thin layer of mince mixture in the bottom of an oven dish then place two lasagne sheets on top, covering it completely. Continue layering until all of the mince and lasagne sheets are used up, leaving the top layer as mince so the sheets are completely submerged.
- Sprinkle over grated cheese, a sprinkle of green herbs/seasoning as well as salt and pepper. Place in the oven for around 30 minutes.
- To check it’s ready, remove from oven and gently make an opening with a knife or fork to ensure the lasagne sheets are soft in the middle.
- Divide onto plates and serve on it’s own or with a side of fresh green salad or crunchy veggies!
