Man I’ve been stuck in a bit of a rut lately with my motivation to exercise. My eating has been good during the Covid-19 lockdown but no matter what I do I just can’t seem to get my body moving! Right before whipping up this incredible recipe for lunch, I attempted to do some squats but just ended up coming back inside and giving up. I was feeling a bit hungry and sick to my stomach so hadn’t properly fuelled up, but my appetite has been all over the place lately!
I expected this recipe to be super average and was just going to do the most basic recipe for Instagram.. But once I had the first mouthful MY MIND WAS BLOWN!
THIS is the energy I had been needing. Full of flavour, creaminess, lots of fibre and easy on the stomach.
Tahini Maple Dressing
Most salad dressings are full of sugar, contain dairy or just don’t taste nice in my opinion. Tahini is ground sesame seeds, commonly used in the vegan world and known for its high protein. It’s a little bitter so combining it with rice malt syrup (or maple syrup) and lemon juice makes the perfect dressing to top your salad and make it enjoyable!
Balsamic
Today’s recipe features Sticky Balsamic! I received 12 bottles in the post to have some fun and create some new recipes. Before today I started to wonder what the hell I’m going to make. When I drizzled it on top I expected it to be a watery vinegar, but it was THICK and luscious like a glaze! I’m actually a huge fan of balsamic glaze to make my meals photo-ready and for flavour of course. But I had never tasted anything this rich and of such high quality! Today I used the apple flavour for something crisp and refreshing. It did not disappoint!
Some of their other flavours include lemon, orange, pear, fig, pomegranate, quince, raspberry and truffle.

The ULTIMATE Nourish Bowl

- TAHINI MAPLE DRESSING
- Juice from 1/2 Lemon
- 2 Tbsp Maple or Rice Malt Syrup
- 2 Tbsp Tahini
- SALAD
- 2 Handfuls Cos Lettuce (or spinach)
- 1 Capsicum
- 1 Avocado
- 2 c Kumara (cooked)
- 400g Canned Mixed Beans
- 1 c Cherry Tomatoes
- 1/2 c Sprouts
- GARNISH (optional)
- Turmeric
- Chilli Flakes
- Tuscan Seasoning
- Sesame Seeds
Instructions
- Combine ingredients for the tahini maple dressing in a small bowl.
- Slice and prepare the ingredients for the salad then add to a serving bowl. For the kumara (sweet potato) I just used leftovers from dinner. You can swap this for any complex carbs you like such as wholemeal pasta, quinoa, buckwheat, roast pumpkin or brown rice. You can also add your choice of protein for an extra boost (although it contains enough on it’s own).
- Drizzle over the tahini maple dressing.
- Sprinkle with turmeric, chilli flakes, Tuscan seasoning and sesame seeds (or any herbs and spices of your choice).
- Super simple, quick and easy!
