These wraps are an absolute WINNER for a relaxing weekend. Quick and easy to make, bursting with flavour, and ANYONE can enjoy them – whether they are vegans or not. This makes it perfect for the whole family, or gathering with friends to start the day off right.
This recipe features kumara rosti from The Cool Gardener, who have a range of vegan alternatives including cauliflower schnitzel, beetroot and dairy-free feta patties, as well as the best falafel I have ever tasted. They are perfect to take to any function if you are unsure if your dietary requirements will be met, or to keep in the freezer to add to any meal within minutes!
I made this dish during a glamping trip in Waipu. Cooked everything on the BBQ and it was DIVINE!!!

Vegan Bacon & Kumara Breakfast Wraps

- 2 Spinach Wraps
- 2 Tbsp Dairy-Free Mayo
- 1 Tomato
- 4 Slices of Veggie Bacon
- 4 Pieces of The Cool Gardener Kumara Rosti
- 2 Tbsp Chilli Beans
- Handful of Spinach
Instructions
1. Heat a pan over medium-high heat and cook the kumara rosti and veggie bacon until golden and fragrant. You can also use a BBQ for added flavour. Then heat the chilli beans over the stovetop in a small pot (add a dash of water if needed).
2. Meanwhile, place the wraps onto large plates and spread with dairy-free mayonnaise. Top with spinach and tomato. Once cooked ingredients are ready, place on top and roll into a wrap.
3. ENJOY!!!
