I don’t even know where to start, except to tell you that this is one of the nicest things you will ever taste.. The smooth texture of it melting in your mouth is just crazy, with added sweetness, creaminess and crunch!
I looooove recipes that are super EASY with little prep and cooking time, and without a huge list of ingredients.
I do want to make it clear that this is NOT a ‘healthy alternative’ unlike most of my sweets because the white chocolate and marshmallows have no nutritional value. Usually I pack my raw desserts with lots of whole-foods so they are secretly nourishing. However, this is perfect if you want something yummy to keep in the fridge to enjoy after dinner as a treat while you watch your favourite show, for hormonal cravings, to take to social gatherings, or if you have people over.
It’s totally okay to indulge in these things as a treat, as part of a healthy balanced diet.
This recipe is inspired from Taliha Paige’s SNACK HACKS e-book! Taliha is a body building queen and we have collaborated together so I can try out some of her dishes and share them with you too. I re-created it and made it my own by adding protein powder, trail mix, buckinis, and swapping the sugar free marshmallows for vegan marshmallows. Vegan White Chocolate Rocky Road

- 2.5 c Sweet William White Chocolate Chips (one pack)
- 1/4 c Coconut Oil
- 1 Scoop Nuzest Vanilla Protein
- 75g Vegan Marshmallows (I used Freedom Mallows in Vanilla)
- 1/2 c Trail Mix
- 1/2 c Buckinis (I used Loving Earth)
Instructions
- Gently melt the white chocolate chips on the stovetop, then stir in the coconut oil and protein powder.
- Pour into a shallow dish or loaf pan with baking paper so it can be removed easily.Â
- Sprinkle over the marshmallows, trail mix and buckinis.
- Place in the fridge for a few hours to set, or overnight.Â
- Remove from the dish and cut into squares.
- Store in an air-tight container in the fridge and ENJOY to your hearts content!
