I called these beauty’s ‘crowd pleaser’ because I made them for my family who are mostly omnivores at a Christmas dinner. Everyone who tried them was begging for the recipe and fell in love with this dish!
The ‘sausage meat’ is made up of finely cut onion and mushroom, flavoured with herbs, spices, BBQ and tomato sauce to give it that hearty flavour!
You can create these at home when you have guests over, or even for meal prep during the colder months so you can simply heat and eat. I can promise you it definitely hits the spot!
Crowd Pleaser Vegetarian Sausage Rolls

- Olive Oil
- 1 tsp Crushed Garlic
- 1 tsp Thyme
- 1 tsp Rosemary
- 1 tsp Cajun Seasoning
- 3 Large Onions
- 6 Large Portobello Mushrooms
- 400g Canned Lentils
- 200g Baby Spinach
- 2 Tbsp Tomato Sauce / Or Substitute For Sweet Chilli
- 2 Tbsp BBQ Sauce
- 4 Sheets of Puff Pastry / Or Substitute For 400g Filo Pastry (To Make Vegan Use Dairy-Free Pastry Instead)
- Chilli Flakes For Garnishing
Instructions
- Add 1 Tbsp of extra virgin olive oil to a pan along with the garlic, thyme, rosemary and cajun. Cook for 1 minute until fragrant.
- Add thinly diced onion to the pan and simmer until translucent.
- Add thinly diced mushroom and lentils to the pan and continue cooking until soft and slightly golden.
- Next add the spinach and cook for 1 minute until slightly wilted down and stir in the sauces.
- Cut the defrosted pastry sheets into halves to create a rectangle and spoon 2-3 heaped tablespoons of mixture onto one end. Don’t get it too close too the edge to ensure it doesn’t spill out the sides when rolling up the pastry.
- Roll the pastry encompassing the mushroom filling to create ‘rolls’. This recipe should make about 6-8 sausage rolls, depending on how much filling you put in each.
- Place onto an oven tray lined with baking paper. Gently slice about 5 diagonal lines across the rolls and brush with olive oil.
- Sprinkle chilli flakes over top before placing in the pre-heated oven at 180ΒΊc for approximately 40 minutes.
- Once the sausage rolls are crunchy and golden on top, remove from the oven and serve immediately.
- Enjoy on their own, or serve with a fresh salad. Spinach, tomato, corn and black beans would work well, dressed with avocado oil and/or dairy-free mayo.
